Contemporary consumers are increasingly aware and interested in nutrition and health. However, current evidence-based dietary guidelines do not sufficiently consider individual traits, needs, and preferences. Indeed, dietary guidelines are fixated on the long-term effects, whereas the motivation of consumers to eat healthy is often driven by short-term health, perceived well-being, and taste. To accommodate these interests, while adhering to the general dietary guidelines, we need to develop reformulated tasty products. In addition, we need a new research model, characterized by a stronger focus on the individual and the short-term effects of foods, both on physical and mental well-being (REBUS goals). This project contributes to the main objectives of mission D (appreciated, healthy and safe foods).
