Food losses are a major societal concern worldwide. Fungal spoilage causes a significant part of the current food losses worldwide and forms a widespread challenge for the food industry. Moreover, the consumers demand for mildly processed products and the reduced use of biocides at the primary part of the food chain pose additional challenges. To overcome this, effective antifungal strategies are required at different levels of the food production process, the used ingredients, and the food production environment.
