In this project we focus on the development of a nose- and tongue-on-a-chip that is used to analyse off flavour in a range of natural products.
These include proteins from pulses, umami-based salt replacer systems and (deep) extracts from coffee beans that are important products to (i) replace animal protein (meat consumption), (ii) reduce salt intake, or (iii) reduce waste.
