Chitinnovation: Sustainable chitin/chitosan production and innovative applications.
In this project we investigate a circular approach for the processing of grey shrimp in the Netherlands. This includes automatic peeling, a more sustainable chitin/chitosan extraction process of the leftover using enzymes and less salt. Furthermore, together with the end-users (novel) applications in food and feed areas will be developed for the extracted chitosan. In this consortium Wageningen Food & Biobased Research, Ruitenberg Ingredients B.V., Agrifirm, GPC Kant and Univar Solutions/Novozymes join forces to develop a circular shrimp process in the Netherlands.
