Samenvatting

The transition to more sustainable food production increases the risk of unintentional microbial contaminants in the food chain. This project develops knowledge-based predictive models and strategies to reduce microbiological quality and safety risks throughout the production chain of sustainable plant-protein based foods. Implementation of the project results will lead to in reduction of food waste and food safety incidents in practice.
