Improving plant-based meat analogues by evaluating effects on human health
Meat analogues are a novel food group. Those products are expected to become a significant meal component in future diets worldwide. However, plant-based meat analogues are rarely developed with health impact in mind and this is a missed opportunity. We aim to understand the consequences of the increased intake of meat analogue products on human health, to create health-driven design rules for ingredients for next-generation plant-based meat analogues.
