PROSPECT
In a circular food system, arable land should be used primarily to produce plant biomass for human consumption to safeguard our future need for food. To help secure food safety, mathematical models in combination with large databases encompassing information on growth kinetics and behavior of food pathogens are used. This project aims to contribute to the safety of these food by enrichment of databases with information on the plant-based foods and the development of models that include validation for prediction of pathogen outgrowth in foods containing these new protein sources.
