Samenvatting

Bread is a worldwide staple food. In the EU only, the consumption of bread translates into at least 24.4 million tons of CO2 per year. Due to raising awareness among consumers and policy makers on the sustainability of food chains and food productions, the bakery industry must come up with innovative ways to reduce its impact on GHG emissions. SUS-BAKE will provide tools and technologies to optimise processes towards a climate neutral bakery and to minimize production waste.
