We will develop a new real-time sensing technology for on-line monitoring and control of critical molecular parameters in food processing. Prototypes will be developed for the sensing of specific anti-nutritional factors and high-quality proteins in process streams. At the end of the project two on-site demonstrations will be available as a proof of concept that the sensor technology is applicable in food processing lines.
