RESTRUCTURE aims to implement recently developed scientific knowledge of effects of food structure on energy intake and obesity. Energy intake is predominantly determined by the energy intake rate (kcal/min) which depends on the food texture and energy density. With this game-changing insight, the project will develop innovative business models for attractive foods that moderate the energy intake of nutrient dense foods, and disseminate and communicate a wide audience of relevant stakeholders.
